A delicious pancake recipe ahead of pancake day this year (1st March) contributed by one of the lovely people who use our service. Enjoy! We know we will!

SCOTCH PANCAKES

INGREDIENTS

  • 155g self raising flour   
  • 200 ml milk
  • 1 tsp baking power
  • 1 egg
  • 2 tbsp sugar (optional)
  • A few blueberries or chocolate chips (optional)

 

Put all dry ingredients in a bowl together, whisk egg and milk together in a jug then gradually add them to the bowl of dry ingredients, give it a good whisk until there are no lumps. If you want flavoured pancakes you can add either fruit or chocolate chips, I find blueberries work well and taste delicious.  Before you start cooking rub your frying pan with either oil or butter, make sure your pan is fairly hot before you add some of the pancake mixture, when they bubble on top like the picture below its time to turn them over.

When cooked they should look something like the one below.

They do not take very long to cook so keep a close eye on them, you can spread whatever you like on your pancakes. For me it has to be golden syrup. Enjoy!
